Abstract

The purpose of this article is to provide a scientific rationale for and develop methodological principles for fostering eco-hygienic thinking among future service sector professionals within the context of modern vocational training. The study aims to address the problem of fragmented environmental knowledge and the need for its systematic integration into professional disciplines to ensure high standards of hygiene and food safety in the hospitality industry. This study employs a range of general scientific and specialized research methods. Theoretical analysis and systematization of scientific sources and regulatory acts were used to define the concept of "eco-hygienic thinking" and identify its structural components. The method of modeling professional situations allowed for the development of algorithms for cross-cutting knowledge integration. Pedagogical design was used to create practice-oriented case studies. A systematic approach ensured the coherence of the methodology for fostering professional responsibility among students based on an eco-centric paradigm and the axiological principles of sustainable development. The essence of eco-hygienic thinking has been defined as a multi-level cognitive system that combines sensory-perceptual skills with fundamental knowledge of a product's biological safety. It has been demonstrated that the effectiveness of professional training increases when environmental aspects are integrated throughout the content of disciplines such as "Microbiology, Sanitation, and Hygiene," "Nutritional Physiology," and "Quality Management of Products and Services." The role of HACCP principles as tools for decontaminating contaminants is substantiated, which is critically important in the context of modern technogenic and military contamination of territories. The importance of using case-based technologies is demonstrated, enabling students to identify hidden risks and make responsible decisions while balancing economic profitability and the sanitary reliability of the service. The ethical dimension of training is highlighted, based on the implementation of the principles of organic farming and responsible consumption as strategic factors in a specialist's competitiveness in the labor market. A well-developed eco-hygienic mindset serves as the foundation of professional culture, enabling a shift in a specialist's activities from the mechanical adherence to standards to predictive safety modeling. The integration of eco-centric approaches into the educational process allows for the harmonization of the service sector's development with the requirements of sustainable management. Prospects for further research lie in improving methodological support for vocational education instructors regarding the implementation of eco-oriented technologies and production principles into the practical training of students.
